Brian's Salmon Burgers

This salmon burger took home the prize in the Icy Strait Point Salmon Burger Throwdown for local Brian Katzeek (who also happens to be the Food and Beverage Supervisor at Icy Straight Point.) The Alaskan wilderness cruise ship destination has been amping up the emphasis on Alaska flavors and Native Tlingit traditions on its menus over the past year. New dishes include Hoonah fish tacos made of local cod on fry bread and topped with chipotle slaw; seafood chowder; reindeer sliders and hot dogs; mini salmon burgers; and crab bisque from the award-winning Tracy's Crab Shack in nearby Juneau. All of these can be washed down with an Alaska microbrew. Salmon is a natural fit on the menu not only because the fish are literally jumping out of area waters, but also because Icy Strait Point was founded on the grounds of a salmon cannery, Hoonah Packing Co., which celebrates its 100th anniversary this summer. Visitors can order up the salmon special at the Cookhouse Restaurant, the same eatery that served cannery workers as far back as 1912, or learn to make this salmon burger during the "In Alaska's Wildest Kitchen" cooking excursion

Step 1
1 12 ounce can of salmon
1/2 tsp lemon zest
1 1/2 tsp old bay
2 tbsp chopped onion
1/4 cup bread crumbs
1 tsp black pepper
1/2 lemon • juiced
2 eggs
3 tbsp cilantro
Combine all ingredients and shape into patties. Grill 4 minutes on each side on medium heat.
