LLT Club Sandwich

A great sandwich idea featuring two American Lamb preparations, suitable for casual dining luncheon menus.

Step 1
6 • American lamb blade chops • boned and pounded thin
Kosher salt to taste
Freshly ground pepper to taste
2 tbsp • Olive oil
2 tbsp • Butter
Season blade chops with salt and pepper. Heat a heavy-bottomed pan. Add oil and butter and pan fry chops 1 to 2 minutes on each side until golden brown on each side; reserve.
Step 2
6 each • American lamb tenderloin cutlets, about 3 oz. each • lightly pounded
1 cup • Flour
4 whole • Eggs • beaten
Seasoned bread crumbs as needed
1/3 cup • Olive oil
Dredge tenderloin cutlets in flour, egg and crumbs. Heat oil in a pan and pan fry cutlets until golden brown on each side; reserve.
Step 3
2 each • Tomatoes • sliced
3 tbsp • Extra-virgin olive oil
Kosher salt to taste
Black pepper to taste
Season the tomato slices with olive oil, salt and pepper.
Step 4
1 cup • Mayonnaise
2 tsp • Dijon-style mustard
1 tsp • Fresh mint • finely minced
2 • Cooked eggs • finely chopped
For dressing, mix the mayonnaise, mustard, mint and eggs.
Step 5
18 slice • Artisan white bread • toasted
1 head • Bibb lettuce • washed
Lay out bread slices and spread dressing on one side of each. On 6 slices bread, place lettuce and tomato slices. Add cutlet. Top with another bread slice, lettuce, tomato slice and chop. Place last slice of bread on top. Insert sandwich picks and cut into fourths.
