Quail with Fig Vinegar

Step 1
1 piece • Quail • Boneless
2 tbsp • Butterfat
Cut 1 boneless quail in half.

Season it with salt and pepper.

Fry in 2 tbsp. of butterfat until golden brown.

Remove the quail pieces from the pan.

Place in baking dish and finish it of in the oven (using top heat for the skin to become crisp).
Step 2
8.5 tbsp • Chicken stock
1 tbsp • Honey
4 tbsp • Fig vinegar
1 tbsp • Butter
Add to the frying pan:

8 and a half tbsp of chicken stock.

1 tbsp. of honey.

Let reduce it.

Take off the heat.

Season with 4 tbsp. of Fig Vinegar.

Mount with 1 tbsp. of butter.

Place the quail pieces on a plate.

Pour the Fig vinegar gravy over it.
Serve with basmati rice and fried pine nuts.
