1 lb • small red potatoes, cooked, quartered
1 lb • fresh green beans, cooked, cut in half
1 cup • baby carrots, cooked
1 • small red onion, sliced
1/2 cup • vinaigrette salad dressing
1 • (6 oz.) can Lindsay® Ripe Pitted Olives, drained
4 • plum tomatoes, quartered
4 • eggs, hard boiled, peeled, quartered
2 • (6 oz.) cans albacore tuna, drained, broken into chunks
4 • large red leaf or romaine lettuce leaves
In a medium bowl, toss potatoes, green beans, carrots and onions with dressing.

Fill 2 sections on platter with vegetable mixture.

Arrange olives, tomatoes and eggs in remaining sections of platter.

Place lettuce leaves in center of platter; top with albacore tuna.

Serve over lettuce and accompany with crusty bread.
