Crispy Prawns With Tomato Nam Prik

Step 1
4 shallots • sliced thin
6 garlic cloves • sliced thin
1 lemongrass stalk • sliced
5 red thai chile • seeded
1 tsp fermented shrimp paste
2 lime leaves
1 tsp coriander seed
1 tsp cilantro leaves
1 cup muir glen 2013 reserve halley diced tomatoes
1/4 cup tamarind
1/4 cup fish sauce
1 tbsp palm sugar
1 tbsp blended oil
Tomato Nam Prik:

In a sauce pan on medium heat — sweat the shallots, garlic, lemongrass, ginger and Red Thai chili for 2 minutes. Add the Muir Glen tomatoes and simmer for 5 minutes. Add the remaining ingredients and simmer for 10 minutes. Puree in a blender and serve.
Step 2
16 prawns • peeled and de-veined
2 egg • beaten
1 sheet tofu skin
salt to taste
pepper to taste
1 tbsp cilantro • chiffonade
Pre-heat a fryer to 350 degreesF. Cut the tofu skin into strips the same size as the prawns. Brush the tofu skin strips with the beaten egg & wrap around the prawns.

Place in the fryer for 2 minutes. Place on paper towel to remove excess oil. Season. Serve with the tomato Nam Prik and top with cilantro.
