Crispy Prawns With Tomato Nam Prik

4 • Shallots • sliced thin
6 • Garlic cloves • sliced thin
1 • Lemongrass stalk • sliced
5 • Red thai chile • seeded
1 tsp • Fermented shrimp paste
2 • Lime leaves
1 tsp • Coriander seed
1 tsp • Cilantro leaves
1 cup • Muir Glen 2013 Reserve Halley Diced Tomatoes
1/4 cup • Tamarind
1/4 cup • Fish sauce
1 tbsp • Palm sugar
1 tbsp • Blended oil
Tomato Nam Prik:

In a sauce pan on medium heat — sweat the shallots, garlic, lemongrass, ginger and Red Thai chili for 2 minutes. Add the Muir Glen tomatoes and simmer for 5 minutes. Add the remaining ingredients and simmer for 10 minutes. Puree in a blender and serve.
Step 2
16 • Prawns • peeled and de-veined
2 • Egg • beaten
1 sheet • Tofu skin
Salt to taste
Pepper to taste
1 tbsp • Cilantro • chiffonade
Pre-heat a fryer to 350 degreesF. Cut the tofu skin into strips the same size as the prawns. Brush the tofu skin strips with the beaten egg & wrap around the prawns.

Place in the fryer for 2 minutes. Place on paper towel to remove excess oil. Season. Serve with the tomato Nam Prik and top with cilantro.
