Faff and a Half

This is the drink that led bartender Aidan Bowie from The Blythswood Square Hotel in Glasgow, to victory over 11 of the most talented and creative bartenders on the continent to become the European winner of the Auchentoshan Switch — a transatlantic mixology competition like no other. Aidan’s prize will be to “switch” continents with the North American winner and spend two weeks working in the prestigious Dead Rabbit in New York City, while the North American winner, Michael Webster from Bar Isabel in Toronto, Canada, will do a stint at the acclaimed NightJar Bar in London.

Step 1
50 ml auchentoshan three wood
25 ml lemon juice
25 ml peach purée
15 ml honey and ginger syrup
10 ml amer picon
Shake and double strain over a block of ice into a half pint tankard. Top with a ginger and lemon foam. Foam is made with lecithin powder and ginger beer.
