Sicilian Style Calamari Toast

Step 1
8 oz baby calamari • cleaned
1/4 cup extra-virgin olive oil
1/2 cup white wine
1/4 cup muir glen tomato puree
salt to taste
pepper to taste
Bring a sauté pan to high heat; add the oil. Add the calamari and season generously. Cook for 1 minute. Remove from the heat. Add the white wine and the tomato puree. Remove from pan and chill.
Step 2
1/2 cup castelventrano olives • pitted
1 clove garlic
1/2 cup muir glen 2013 reserve halley diced tomatoes
2 tbsp extra-virgin olive oil
Place all ingredients in a food processor and blend. Mix with chilled calamari.
Step 3
4 slice bread • toasted or grilled
Spoon the calamari/olive mixture on top of warm bread & drizzle with extra virgin olive oil.
