Fennel Remoulade

This is a light and flavorful topping we use this on our rosti crab cakes but it is great on halibut and salmon as well.

Yield:
1 cup
Step 1
3 tbsp Mayonnaise
3 tbsp Lemon juice
2 tbsp Dijon mustard
2 Shallots • chopped
2 tbsp chopped parsley
2 tbsp chopped tarragon
1 tsp capers
1 small fennel bulb, trimmed, quartered and sliced thinly
Salt
Freshly ground black pepper
Mix the mayonnaise, lemon juice, and mustard together in a large bowl. Stir in the shallots, parsley, tarragon, and capers. Add in the fennel and mix. Season with salt and pepper to taste.

Cover and refrigerate at least 1 hour, or until chilled. Serve cold.
