Bell Pepper and Avocado Salad with Oranges

Step 1
2 piece • Bell pepper
Carefully remove the stems, core and seeds of 2 bell peppers.

Wash and cut them into fine rings.

Insert the rings into boiling salted water and boil them for approx. 1 minute.

Remove the peppers form the pot and rinse with cold water.
Step 2
2 piece • Oranges
0.5 lb • Cherry tomatoes
1 piece • Avocado • matured
• Lemon juice
1 piece • Shallot
Peel 2 oranges and cut out the fillets.

Sprinkle lb of cherry tomatoes with boiling water and afterwards rinse with cold water to remove the skin more easily.

Peel 1 matured avocado and cut it into stripes.

Drizzle some freshly squeezed lemon juice onto the avocado bits.

Skin and dice 1 shallot.
Step 3
2 tbsp • Bouvier Beerenauslese Vinegar
2 tbsp • Tiger-nut oil
1 tsp • Prune mustard
Blend everything with:

2 tbsp. of Bouvier Beerenauslese Vinegar.

2 tbsp. of tiger-nut oil.

1 tsp. of Prune Mustard
