Hibiscus Tea

This refreshing icy tea from Chef Paco Isordia is served to all guests upon arrival at the Viceroy Zihuatanejo.

1 lb hibiscus flower
3 star anise
5 l water
8 oz mango puree
1 cup sugar
Broil the hibiscus flower and the star anisette in 5 liters of water for 1 hour. Add the mango and the sugar and filter the tea, keep cool.

Served chilled w/ fresh mint leaves.
