|1 large live Maine lobster|
|2 Garlic cloves • finely sliced|
|1 tbsp Ginger • shredded|
|3 Scallions • finely chopped, divided|
|1 tbsp salted black beans, rinsed in cold water|
|2 tbsp Soy sauce|
|1 tbsp Rice wine|
|1 Sesame oil|
|2 tbsp Peanut oil|
Place the Maine lobster in boiling water for 2 minutes, and then dunk it into cold water. Remove its head, and cut it in half, devein it, and remove any roe. Cut it into even serving pieces, breaking the claws with the back of a knife so they cook evenly and are easy to eat.
Lay the Maine lobster on a large plate, and place it on a trivet set over a wok with boiling water. Scatter the garlic, ginger, 2 scallions and black beans on top, and then sprinkle the soy sauce, rice wine and sesame oil. Cover the wok and let it steam for 10 minutes.
Remove the Maine lobster from the wok, discard the water and dry the wok. Heat the peanut oil in the wok over high heat, and then add the Maine lobster back in. Scatter 1 scallion on top, and serve with rice and stir-fried vegetables.
