The Dark Horse

We were creating a rose sangria with shiso, strawberry, and rhubarb and when I saw the bunch of it behind the bar I remembered that people often refer to Shiso as "Japanese Mint", so that is why we decided to use it in our derby cocktail. Our shiso is purple, which adds to the dramatic color of the cocktail but if you cannot find it, regular mint can work too.

2 sprig • Shiso
1/2 oz • Lemon juice
1/2 oz • Simple syrup
1 oz • Domaine de Canton Ginger Liquor
1 1/2 oz • Dark Horse Reserve Bourbon
1 • spoonful Cabernet Sauvignon or other fruity red wine
Muddle 1 sprig shiso with lemon juice, simple syrup, and ginger liquor

Fill cup with ice

Stir

Top with a spoonful of Cabernet Sauvignon floater
