Potato Salad with Curry-Dressing

Step 1
2.5 lb Potatoes
0.5 lb Snow peas
0.5 lb Cherry tomatoes • quartered
Wash and boil 2 lbs potatoes in a covered pot for approx. 20 minutes

Rinse with cold water and peel Let them cool down

Wash, peel and boil lb snow peas in salted water for 3-5 minutes

Wash and quarter lb cherry tomatoes
Step 2
1.5 cup Yogurt
0.5 cup Milk
3-4 tbsp Muskat ottonel Trockenbeerenauslese vinegar
1-2 tsp Curry powder
White pepper
3 tbsp Light mayonnaise
2-3 piece Stems of parsley
Curry-Dressing:

Combine 3 tbsp. light mayonnaise with:

1 cups of yogurt

cup of milk

Stir well

Season with:

3-4 tbsp. Muskat Ottonel Trockenbeerenauslese vinegar

1-2 tsp. curry powder

1 pinch salt

Some white pepper

Blend the curry-dressing with the prepared salad ingredients and marinate for at least 1 hour.

Wash, dry, chop and sprinkle 2-3 stems of parsley over the potato salad before serving.
