Wild Mushroom Vinaigrette

Step 1
1 lb chanterelles • cleaned and quartered
1 lb black trumpet • cleaned and quartered
1 lb shitakes • cleaned and quartered
1 each red jalapenos • cleaned and sliced
2 each shallots • minced
2 tbsp garlic • minced
2 cup ponzu
grapeseed oil as needed
extra-virgin olive oil as needed
kosher salt to taste
black pepper to taste
Saute mushrooms with garlic and shallots. Refrigerate.

Once cool, mix everything except the oils.

Emulsify and then season.

Keep refrigerated.
