Raznjici - Pork and Veal Skewers

Step 1
2 lb Veal
2 lb Pork
Salt and Pepper as needed
Cut meat into 1.5" cubes. Dry meat and season.
Step 2
2 lb Garlic cloves • mashed
4 oz Onions • fine diced
4 oz Vegetable oil
4 oz Lemon juice
2 tbsp Parsley • chopped
Marinade: Mix all ingredients together, pour over meat, and marinate for three hours. Skewer meat.
Step 3
3 oz Butter
2 oz Flour
1 cup Onions • fine diced
1.5 qt Veal stock
1 cup Sour cream
3 tbsp Dill • chopped
Salt and Pepper as needed
Dill Sauce: saute onions in butter. Add flour and cook until golden brown, and stock and bring to a boil. Simmer for 20 minutes, then add sour cream and dill. Adjust seasoning.
Step 4
Cook skewers on broiler while brushing with marinade. Serve with sauce.
