15 piece rice paper
Brush with warm water, allowing rice paper to hydrate.
Step 2
22.5 oz sea scallops • sliced in half
Grill on one side for color.
Step 3
2 whole red pepper • julienne
2 cup spinach leaves
3 cup bean sprouts
1/2 cup snow peas • julienne
1/2 head white cabbage • shredded
2 tbsp cilantro, whole leaves
2 oz thai dressing • see recipe
Marinate vegetables in Thai dressing.
Step 4
1 lb tofu
1 oz thai dressing
Grill tofu and marinate in Thai dressing. Dice and reserve for service.
Step 5
30 oz angel hair pasta • cooked
30 oz hot and sour sauce • see recipe
For each serving: Rest one piece rice paper roll against 2 oz. pasta. Sprinkle diced tofu around roll. Pour 2 oz. hot and sour sauce over all.
