Step 1
10 lb • Portobello Mushrooms
10 lb • Cremini Mushrooms
10 lb • Plum Tomato • Diced
Roast mushrooms and tomatoes. Reserve.
Step 2
5 lb • Leeks
5 lb • Shallots
1 lb • Garlic
1 pt • Olive Oil
Saute leeks, shallots, and garlic in olive oil in a non-reacitve pan.
Step 3
1 qt • White Wine
Deglaze pan with white wine, reduce au sec.
Step 4
1 bunch • Parsley • chopped
1 bunch • Sage • chopped
Toss in herbs and roasted mushrooms and tomatoes and fold together.
