Herbed Mushrooms

Step 1
10 lb portobello mushrooms
10 lb cremini mushrooms
10 lb plum tomato • diced
Roast mushrooms and tomatoes. Reserve.
Step 2
5 lb leeks
5 lb shallots
1 lb garlic
1 pt olive oil
Saute leeks, shallots, and garlic in olive oil in a non-reacitve pan.
Step 3
1 qt white wine
Deglaze pan with white wine, reduce au sec.
Step 4
1 bunch parsley • chopped
1 bunch sage • chopped
Toss in herbs and roasted mushrooms and tomatoes and fold together.
