Orzo Salad

Step 1
1 1/2 lb Orzo
1 pt Red Onion
1 pt Red Pepper
1 pt Green Pepper
1 pt Yellow Pepper
1 pt Zucchini
1 pt Yellow Squash
1 pt Apricot
1/2 pt Cilantro
2 qt Arugula
1 pt Asian Dressing
1/2 pt Scallion • Chopped
Fully cook Orzo, shock under cold water. Toss vegetables with salt and pepper and oil. Roast in oven at 400 degrees for 10 minutes or until soft with color. Let cool.

Toss all ingredients adding cilantro, scallion and arugula last.
