Clam and Bacon Dip

Step 1
1/4 lb bacon
Chop bacon and cook over moderate heat, stirring, until golden and crisp. Drain on paper towels.
Step 2
12 oz beer
3 dz clams, cherrystone • rinsed and purged
Steam clams in beer until just done, drain clams reserving juice. Chop clams and chill
Step 3
1/4 cup sour cream
1/3 cup red bell pepper • finely chopped
3 each scallions • finely chopped
2 tbsp basil - fresh • finely chopped
1 tsp horseradish
1 tsp lemon juice, fresh
3/4 tsp worcestershire sauce
Thoroughly mix all ingredients. Whisk in 2 Tablespoons reserved clam juice, clams, and bacon.
