Maple Walnut Cheese Cake

A lighter version of the clasic New York Cheese Cake, yet very satisfying and delicious. There are countless variations to create your own signature cheese cake. Honey, cinnamon, pumpkin, raspberry or citrus are just a few sample flavors that can be added to your cheese cake or served on the side.

Step 1
2 oz walnuts - chopped
4 oz graham cracker crumbs
3 oz apple juice
1/2 oz butter - melted
Chop walnuts fine in a food processor fine for the crust. Add in graham cracker crumbs and combine. Add in apple juice and butter in a stream to bring mixture together. Press crumbs into a 9" tart pan or into 12- 4 oz timbales.
Step 2
12 oz ricotta, skim milk
13.5 oz cream cheese-reduced fat
1.5 oz yogurt, plain, nonfat
8 oz maple syrup
Drain ricotta well, blend in food processor until smooth. Drain the yogurt for at least 1 hour or over night. Cream the cheese, add in the maple syrup, drained yogurt and smooth ricotta.
Step 3
2 each eggs - large
1 oz egg - white
1 oz corn starch
2 each vanilla beans
Slowly blend in the eggs, egg whites and cornstarch. Cream well, then pour into molds. Bake in a 300 degree oven for about 45 minutes or until firm to touch.
