Mediterranean Lamb Meatballs

10 lb Ground Lamb
10 lb Ground Beef
5 lb Feta Cheese
3 lb Kalamata Olives
2 lb Pinenuts
1 lb Garlic • chopped
1 lb Shallots • chopped
15 Eggs
2 qt Bread Crumbs
1 pt Capers • drained and chopped
2 bunch Parsley • chopped
Cinnamon to taste
Cumin to taste
Salt & Pepper to taste
Using mixer with paddle attachment, mix all ingredients prior to forming meatballs.

Cook and check for flavor, once flavor is correct, shape into mini meatballs using eyeball scoop.

Pack on half pans and freeze. Season with salt and pepper as needed. If necessary, eggs and grated par, bread crumbs may be added for stability.
