Cheese Croquettes

Step 1
1 cup cheese • grated
1 tsp onion • grated
1 tbsp parsley • finely chopped
2 cup thick white sauce
bread crumbs as needed
1 whole egg • beaten
1 tbsp water
 oil • for frying
Add cheese, onion and parsley to white sauce using a double boiler and heat cheese until melted.

Turn out onto a well greased platter and cool.

Shape into a cylinder, roll in bread crumbs, dip into mixture of egg and water and roll again into crumbs.

Fry in oil approx 380F about 1 minute or until golden brown.
