Butternut Squash Bisque

Step 1
1 oz butter, sweet
2 tsp shallots • chopped
1 cup celery • chopped
1 cup onion • chopped
2 tsp garlic • chopped
1 tbsp thyme, fresh
In soup pot, melt butter. Saute shallots, celery, onion, garlic and thyme.
Step 2
4 lb butternut squash • cleaned and diced
2 qt chicken stock
2 each bay leaves
Add in butternut squash, chicken stock and bay leaves.

Cook until tender. Remove bay leaves. Puree and pass through strainer.
Step 3
1/2 tsp nutmeg • grated
 salt, to taste
 pepper, to taste
1 cup heavy cream
Add in nutmeg, salt, pepper and cream.
