Butternut Squash Bisque

Step 1
1 oz • Butter, sweet
2 tsp • Shallots • chopped
1 cup • Celery • chopped
1 cup • Onion • chopped
2 tsp • Garlic • chopped
1 tbsp • Thyme, fresh
In soup pot, melt butter. Saute shallots, celery, onion, garlic and thyme.
Step 2
4 lb • Butternut Squash • cleaned and diced
2 qt • Chicken Stock
2 each • Bay leaves
Add in butternut squash, chicken stock and bay leaves.

Cook until tender. Remove bay leaves. Puree and pass through strainer.
Step 3
1/2 tsp • Nutmeg • grated
• Salt, to taste
• Pepper, to taste
1 cup • Heavy Cream
Add in nutmeg, salt, pepper and cream.
