|12 oz Whole wheat flour|
|4 oz All-purpose flour|
|3 oz Egg whites|
|1 tbsp Olive oil|
Put flour in food processor with metal blade. Start machine and gradually add egg whites and olive oil.
Check consistency. If too dry, add more egg whites. If too wet, add more whole wheat flour.
Knead dough into ball and wrap in plastic wrap. Let rest for 1/2 hour.
Using pasta machine, roll out till setting #1. Use fettucine blades.
Cook in hot water till al dente, and shock. Coat with a little salad oil to prevent sticking.
