Bulgur Wheat with Soldier Beans and Sage

1 lb • Dried soldier beans
2 lb • Bulgur wheat
6 oz • Olive oil
6 oz • Balsamic vinegar
6 • Tomatoes • diced
Salt to taste
Pepper to taste
1 bunch • Sage • chopped
Soak beans in water overnight.

In a large pot of boiling water, cook the bulgur wheat until tender (approximately 25-30 minutes). Drain in a colander and rinse with cold water. Press excess moisture out of bulgur wheat.

In a large pot of boiling water, cook the soldier beans with Thyme stem and onions, until tender, drain and chill.

Combine the beans, bulgur wheat, tomatoes, sage, vinegar and oil. Season to taste.

Serve as side dish or accompaniment to additional protein

Curious why the bulgur is cooked 25 minutes. I am used to just pouring boiling water over it. Is it a different texture?
