Step 1
6 lb Chicken Bones • clean and rinsed
4 each Chicken Legs
6 qt Water
8 Onion • Lg dice
3 Celery • Lg dice
3 Carrot • Lg dice
2 Fennel • Lg dice
Start all in cold water, bring quickly to simmer, frequently skim foam & fat, cook for 6 hours. Strain & chill quickly.
