|6 oz egg whites|
|1 tsp cream of tartar|
|3 oz 10x sugar|
|.5 tsp lemon rind|
Whip egg whites and cream of tartar to soft peaks.
Gradually add sugar. Whip until stiff and glossy.
Gently fold in flour/sugar and lemon rind.
Spray savarin ring molds lightly with cold water.
Pipe batter into ring molds and bake at 350 degrees until light golden brown on top.
Cool completely before unmolding.
