1 lb • Cherries
1 cup • Sugar
3/4 cup • Hot water
Using a muddler or masher, smash cherries and sugar together in a bowl.The mixture should be chunky, and it is fine to leave some fruit whole. Stir in the hot water and let stand, stirring occasionally, until cooled. Cover and chill. Strain before using in teas, sodas, cocktails, and use the cherry chunks as garnish.
