Pickled Watermelon Rind

4 cup Watermelon rind, peeled
.25 cup Kosher salt
2 cup Sugar
1 cup Cider vinegar
10 each Cloves
2 each Anise star
1 each Lemon peel
1 tsp Peppercorns • cracked
Salt cure the watermelon rind overnight. Rinse the rind. Cut the rind into shapes.

Simmer the rind for ten minutes in water.

Bring the sugar, vinegar, and clove to a boil. Add the rind and simmer lightly for ten minutes. Vacuum pack and let stand for 24 hours or more.
