Baked Jalapeno Jack Grits

Step 1
.25 cup Onion • small dice
1 oz Butter - melted
.75 cup Grits
3 cup Milk • scalded
In a saucepan, sweat the onions in the butter until transparent. Add the grits, then the hot milk, stirring rapidly. Cook until the grits have softened and thickened. Allow them to cool to room temperature.
Step 2
.25 tsp Salt
.5 cup Jalapeno jack cheese • shredded
.25 cup Green bell pepper • small diced, sauteed
1 tbsp Cilantro • chopped
2 tbsp Lime juice • fresh
.25 tsp Cumin
.5 tsp Chili powder
2 Egg whites • soft peak
Mix the seasonings and peppers into the grits

Temper egg whites into cooked grits. Pour into a 1.5 qt baking dish that has been rubbed with butter. Bake at 350 for approximately 35 minutes until fluffy and lightly browned.
