Step 1
8 oz barley
Cook the barley in boiling water until tender and drain
Step 2
10 oz onion cut brunoise
5 oz carrot cut brunoise
5 oz turnip,white cut brunoise
2 oz butter
5 qt chicken stock
1 oz garlic chopped
In a heavy soup pot, sweat the vegetables until 1/2 cooked. Do not let them brown. Add the chicken stock and bring to a boil. Reduce the heat and simmer until the vegetables are tender.
Step 3
2 lb mushrooms -diced
4 oz butter
salt and white pepper as needed
While the soup is simmering, saute the mushrooms lightly. Add the mushrooms and the drained cooked barley. Simmer around 5 minutes . Degrease the soup and adjust seasoning with salt and pepper.
