Chancho Adobado - Pork in Orange and Lemon Sauce with Sweet Potatoes

Step 1
2 cup cider vinegar
3 tbsp annatto seeds • crushed fine
2 tbsp cumin seeds • ground
1 tbsp garlic • chopped
1 tbsp salt
1 tsp black pepper-ground
Mix all ingredients together to create the marinade.
Step 2
6 lb pork-lean-boneless • 1" cube
Marinate pork overnight.
Step 3
4 oz olive oil
3 pt white stock
Remove pork and dry; save marinade. Heat oil to smoking point and brown pork. Pour off oil and discard. Add marinade and stock and simmer until meat is tender.
Step 4
3 cup orange juice, fresh
.25 cup lemon juice, fresh
arrowroot as needed
salt and pepper to taste
Add orange and lemon juices, bring to a simmer for 3 minutes. Adjust consistency with arrowroot and season with salt and pepper.
Step 5
12 each sweet potatoes • peeled, cooked, sliced
Arrange potatoes on a place and pour pork and sauce over.
