Tomato, Green Pepper, and Vidalia Bruschetta

Step 1
3 tbsp Extra-virgin olive oil
2 each Green bell pepper • thin strips
1 each Vidalia onions • thinly sliced
Salt and Pepper to taste
Heat olive oil in a skillet and stir in peppers and onions. Cook over low heat until softened; about 15 minutes. Season with salt and pepper.
Step 2
1 each Tomatoes, vine ripened
1 tsp Balsamic vinegar
Salt to taste
Combine tomatoes, vinegar, and salt in a bowl. Set aside.
Step 3
6 each Italian bread-thick slices
1 each Garlic clove
Extra-virgin olive oil as needed
Toast bread slices. Rub the cut side of garlic over one side of the bread. Drizzle with olive oil. Top with peppers and then a spoonful of tomatoes. Press vegetables slightly to compact them.
Step 4
Fresh basil as needed
Black pepper-ground as needed
Garnish with fresh basil and freshly ground black pepper.
