Tomato, Green Pepper, and Vidalia Bruschetta

Step 1
3 tbsp extra-virgin olive oil
2 each green bell pepper • thin strips
1 each vidalia onions • thinly sliced
salt and pepper to taste
Heat olive oil in a skillet and stir in peppers and onions. Cook over low heat until softened; about 15 minutes. Season with salt and pepper.
Step 2
1 each tomatoes, vine ripened
1 tsp balsamic vinegar
salt to taste
Combine tomatoes, vinegar, and salt in a bowl. Set aside.
Step 3
6 each italian bread-thick slices
1 each garlic clove
extra-virgin olive oil as needed
Toast bread slices. Rub the cut side of garlic over one side of the bread. Drizzle with olive oil. Top with peppers and then a spoonful of tomatoes. Press vegetables slightly to compact them.
Step 4
fresh basil as needed
black pepper-ground as needed
Garnish with fresh basil and freshly ground black pepper.
