Bacon Topped Meatloaf

Step 1
2 whole eggs
1/2 cup onion • finely chopped
1/2 cup green bell pepper • finely chopped
6 tbsp ketchup
10 saltine crackers • crushed finely
3 tsp worcestershire sauce
1.5 tsp salt
2 lb ground chuck
4 slice bacon slices
Preheat oven to 400F. In a bowl, whisk together eggs, onion and bell pepper, 4 tbsp of ketchup, saltines, Worcestershire, salt and pepper.

Add the beef and blend well with your hands until just combined. Form the mixture into two loaves. Place onto a shallow baking pan, spread with remaining ketchup and place bacon on top of loaves.

Bake for 30 minutes or until cooked through.
