Mansahari Mirchi Soup - Mulligatawny Soup

Step 1
16 each fresh chiles
2 tbsp coriander - ground
4 tsp tumeric
1.5 tsp cumin powder
1 tsp nutmeg
.5 tsp cloves-ground
.5 oz black peppercorns-ground
4 tsp ginger root-grated
10 each garlic cloves
Grind all spices into a fine paste.
Step 2
1 oz ghee
4 each onions • chopped
2 lb mutton/lamb • 1/3" diced
Saute onions until golden brown. Add spice paste and mutton meat and saute for an additional 5 minutes.
Step 3
5 tsp salt
6 oz tomato paste
1 gal white stock
Add salt, tomato paste, and stock and simmer until the meat is 80% cooked.
Step 4
4 each carrots-large • 1/4" dice
4 each apples-large • 1/4" dice
Add carrots and apples. Simmer soup until everything is tender.
