Tandoori Morg - Roast Chicken with Yogurt Masala

Step 1
3 each • Chickens, 3lb
Lemon juice to taste
5 tsp • Salt
Peel skin from chickens and cut each one in 4 parts. Cut 1/8" slits in breast and thigh. Mix lemon and salt and rub all over chicken and pressing firmly into slits.
Step 2
1 tsp • Saffron threads
2 oz • Water
Add saffron to boiling water and soak for 5 minutes. Pour over chicken and marinate for 30 minutes.
Step 3
1 cup • Yogurt
.5 oz • Cumin
1 tbsp • Cardamon
3 tsp • Coriander - ground
2 oz • Ginger-grated
4 each • Garlic cloves
.5 oz • Cayenne
Mix yogurt and all spices together to make "yogurt masala." Spread masala over chicken and marinate for a minimum of 12 hours.
Step 4
1 oz • Ghee
Lime wedges as needed
Place chicken along with marinade into roasting pan on top rack. Roast for 10 minutes at 375F, reduce heat to 325F and roast until done. Occasionally baste with ghee. Serve with lime wedges.
