Step 1
1 qt • Cornmeal-yellow
1/4 cup • Baking Powder
Salt to taste
White Pepper to taste • ground
Cayenne to taste • ground
Hungarian Paprika, for color to taste
2 each • Eggs
3/4 qt • Flour
1/2 bottle • Beer
Combine dry ingredients with eggs and beer to make batter
Step 2
60 each • Cocktail Franks
60 each • 6" Skewers
Put franks on 6 inch skewers
Step 3
Flour as needed
Egg as needed • beaten
Dredge in flour and dip in beaten egg, then in batter from step 1
Step 4
Fry sample until golden brown, adjust seasoning
