Step 1
1 qt cornmeal-yellow
1/4 cup baking powder
salt to taste
white pepper to taste • ground
cayenne to taste • ground
hungarian paprika, for color to taste
2 each eggs
3/4 qt flour
1/2 bottle beer
Combine dry ingredients with eggs and beer to make batter
Step 2
60 each cocktail franks
60 each 6" skewers
Put franks on 6 inch skewers
Step 3
flour as needed
egg as needed • beaten
Dredge in flour and dip in beaten egg, then in batter from step 1
Step 4
Fry sample until golden brown, adjust seasoning
