Baingan Chutney - Eggplant Chutney

2 lb • Eggplant • Peel & 1/4" dice
3 each • Onions • chopped
1 lb • Apple • peeled and chopped
1.25 cup • Vinegar
2 tsp • Ginger powder
1 tsp • Salt
1.25 lb • Brown sugar
2 tsp • Pickling spices • wrapped in sachet
Place all ingredients in a pot and simmer for 30-40 minutes. Remove sachet, add sugar, and cook until chutney is thick and shiny. Chill and serve.
