Rigatoni and White Bean Salad

Step 1
1/2 lb rigatoni
Cooked in salted water, rinsed, and drained.
Step 2
2 each tomatoes, ripe • peeled, seeded, diced
2 cup cannellini beans • cooked
2 each green onions • 1/4" slices
1 each escarole • washed, stemmed, sliced
Combine pasta with tomatoes, beans. onions, and escarole.
Step 3
1/2 cup extra-virgin olive oil
3 tbsp red wine vinegar
Dressing: Combine and season as needed.
Step 4
3 tbsp basil - fresh • chopped
1 oz parmesan cheese • shaved
Toss salad with dressing. Garnish with basil and shaved Parmesan.
