Rigatoni and White Bean Salad

Step 1
1/2 lb • Rigatoni
Cooked in salted water, rinsed, and drained.
Step 2
2 each • Tomatoes, ripe • peeled, seeded, diced
2 cup • Cannellini beans • cooked
2 each • Green onions • 1/4" slices
1 each • Escarole • washed, stemmed, sliced
Combine pasta with tomatoes, beans. onions, and escarole.
Step 3
1/2 cup • Extra-virgin olive oil
3 tbsp • Red wine vinegar
Dressing: Combine and season as needed.
Step 4
3 tbsp • Basil - Fresh • chopped
1 oz • Parmesan cheese • shaved
Toss salad with dressing. Garnish with basil and shaved Parmesan.
