|1 large bunch of basil • leaves only|
|3 garlic cloves • peeled|
|1 handful pine nuts (pignoli)|
|3/4 cup freshly grated parmesan cheese|
|3-4 tbsp extra-virgin olive oil|
Heat oven to 350 degrees. Spread the pine nuts evenly on a baking sheet and toast until golden and fragrant, about 8 to 10 minutes. Let cool.
Food Processor Method: Combine the pine nuts, basil, and garlic. Pulse until the pine nuts are finely chopped. Then, with processor running, pour the oil in a steady stream through the feed tube and process until smooth. Season with salt and/or pepper if needed.
