Step 1
.5 loaf bread - italian-day old • small pieces
1 each red onion • minced
1 each scallions • sliced
2 each cucumbers • peeled, seeded, and slice
1 each green bell pepper • seeded and chopped
1 tbsp capers • coursely chopped
3 each tomatoes-very ripe • peeled, seeded, and chop
In a large bowl toss together.
Step 2
.5 cup olive oil
.25 cup lemon juice
salt and pepper to taste
2 cl garlic • pressed
parsley - chopped as needed
Dressing: Stir together. Pour over salad and toss.
