Step 1
.5 loaf • Bread - Italian-day old • small pieces
1 each • Red onion • minced
1 each • Scallions • sliced
2 each • Cucumbers • peeled, seeded, and slice
1 each • Green bell pepper • seeded and chopped
1 tbsp • Capers • coursely chopped
3 each • Tomatoes-very ripe • peeled, seeded, and chop
In a large bowl toss together.
Step 2
.5 cup • Olive oil
.25 cup • Lemon juice
Salt and Pepper to taste
2 cl • Garlic • pressed
Parsley - chopped as needed
Dressing: Stir together. Pour over salad and toss.
