Step 1
.5 loaf Bread - Italian-day old • small pieces
1 each Red onion • minced
1 each Scallions • sliced
2 each Cucumbers • peeled, seeded, and slice
1 each Green bell pepper • seeded and chopped
1 tbsp Capers • coursely chopped
3 each Tomatoes-very ripe • peeled, seeded, and chop
In a large bowl toss together.
Step 2
.5 cup Olive oil
.25 cup Lemon juice
Salt and Pepper to taste
2 cl Garlic • pressed
Parsley - chopped as needed
Dressing: Stir together. Pour over salad and toss.
