Papaya Plantain Salsa

Step 1
2 each • Plantains - yellow • fine diced
1 tsp • Extra-virgin olive oil
Toast the diced plantain with the oil in a non stick saute pan.
Step 2
1 each • Papaya • fine diced
1 each • Red onion • fine diced
1 each • Pepper, red • fine diced
1 each • Pepper, yellow • fine diced
1 tbsp • Cilantro • chopped
1 tbsp • Chives • chopped
In a bowl combine all ingredients with the toasted plantains.
Step 3
1 each • Papaya • fine diced
2 cup • White wine vinegar
3 tsp • Honey
3 each • Lime juice
Puree in a food processor until smooth. If mixture appears too thick, thin it out with slightly more vinegar. Strain through a fine sieve and combine with the papaya mixture.
