Papaya Plantain Salsa

Step 1
2 each plantains - yellow • fine diced
1 tsp extra-virgin olive oil
Toast the diced plantain with the oil in a non stick saute pan.
Step 2
1 each papaya • fine diced
1 each red onion • fine diced
1 each pepper, red • fine diced
1 each pepper, yellow • fine diced
1 tbsp cilantro • chopped
1 tbsp chives • chopped
In a bowl combine all ingredients with the toasted plantains.
Step 3
1 each papaya • fine diced
2 cup white wine vinegar
3 tsp honey
3 each lime juice
Puree in a food processor until smooth. If mixture appears too thick, thin it out with slightly more vinegar. Strain through a fine sieve and combine with the papaya mixture.
