Lemon Curd

Step 1
10 lb 8 oz sugar
50 lemons • zest of
3 qt 16 oz lemon juice
Combine sugar, zest and lemon juice in a bowl over double boiler till warm.
Step 2
80 eggs
Temper eggs and add to mixture.
Step 3
13 lb butter
Cook till mix starts to thicken, then add butter. Continue to cook till melted. Remove from heat. Cool down over ice bath. If using tartlets, fill when curd is warm and use a funnel gun.
