Lemon Glaze for Fish

Step 1
8 oz lemon juice, fresh
2 tbsp ginger root • grated
3 tbsp balsamic vinegar
4 oz honey
3 tbsp whole-grain mustard
Simmer all ingredients for 2-3 minutes. Strain & chill.
Step 2
12 oz olive oil
2 tbsp parsley - fresh • chopped
Put the above chilled liquid into a blender with the parsley. Add the oil to emulsify. When fish has been cooked to almost done, glaze with mixture and broil to set the glaze.
