Tabbouleh Salad

Step 1
1 1/2 gal water
1 lb bulgar wheat
Bring the water to a boil. Add the bulgar, cover and reduce the heat to medium-low. Simmer the bulgar until tender, about 15 minutes. Let stand 5 minutes, and then fluff with fork. Let cool.
Step 2
3 each english cucumbers • cleaned and diced
3 each plum tomatoes • cleaned and diced
1 bunch fresh mint • chiffonade
1/2 bunch fresh parsley • minced
4 each lemon • juiced
3 oz extra virgin olive oil
kosher salt to taste
black pepper to taste
Add all ingredients to the bulgar, season and then refrigerate.
