|2 tbsp red onion • diced|

|6 tbsp pitted black olives • chopped|

|3 tsp red wine vinegar|
|10 oz fresh - soft goat cheese|
|24 piece 1/4 inch thick baguette slices • toasted with oil|
|2 oz baby arugula • chiffonade|
|24 slice rare beef • thinly sliced|
|2 tbsp horseradish|
|1 tsp black pepper|
Mix onions, red peppers, olives, thyme, oil and vinegar in small bowl for relish, can be premade, cover and refrigerate.
Mix goat cheese on toasted baguette slices. Divide arugula among toasts. Sprinkle beef slices lightly with salt and pepper and place atop arugula. Top each with small dollop of relish.
