Step 1
1 1/2 qt chicken stock • defatted
15 oz potatoes • medium diced
3 1/2 oz onion • medium diced
3 1/2 oz celery • medium diced
8 green peas
4 oz spanish sherry
2 tsp saffron
1 tsp salt
2 tsp mrs. dash vegetable seasoning
2 tsp fresh herbs
2 tsp worcestershire sauce

Steam vegetables; add to chicken stock. Add peas, sherry, seasonings, herbs, Tabasco, and worcestershire sauce.
Step 2
2 lb any fresh fish scraps
20 mussels
20 clams
1 bunch fresh tarragon
Poach fish lightly and remove. Portion soup. Flake fish onto soup and add 2 mussels and clams each. Garnish with tarragon leaf.
