Gluten-free Potato Bread

Step 1
pinch sugar
2 each yeast - baker's - active dry
1/8 cup warm water • 110-115 degrees
Mix sugar with water and add the yeast. Stir until well mixed.
Step 2
2 tbsp sugar
1.5 cup rice flour
1 tsp salt
.75 cup sweet rice flour
1 tbsp pectin
.5 cup potato starch
.5 cup potato flakes
.5 cup dry milk powder
3 tsp xanthan gum
Mix all ingredients in a bowl with whisk.
Step 3
1-2 cup water
2 tbsp vegetable oil
3 each eggs • slightly beaten
Combine water, vegetable oil, and eggs with yeast mixture.
Step 4
Add dry ingredients to wet ingredients in 3 batches to form a sticky dough. Put dough in a greased 8 cup loaf pan. Set in a warm place for 1 hour to rise.
Step 5
Bake at 350 degrees for 45 minutes.
