Gluten-free Potato Bread

Step 1
pinch • Sugar
2 each • Yeast - baker's - active dry
1/8 cup • Warm water • 110-115 degrees
Mix sugar with water and add the yeast. Stir until well mixed.
Step 2
2 tbsp • Sugar
1.5 cup • Rice flour
1 tsp • Salt
.75 cup • Sweet rice flour
1 tbsp • Pectin
.5 cup • Potato starch
.5 cup • Potato flakes
.5 cup • Dry milk powder
3 tsp • Xanthan gum
Mix all ingredients in a bowl with whisk.
Step 3
1-2 cup • Water
2 tbsp • Vegetable oil
3 each • Eggs • slightly beaten
Combine water, vegetable oil, and eggs with yeast mixture.
Step 4
Add dry ingredients to wet ingredients in 3 batches to form a sticky dough. Put dough in a greased 8 cup loaf pan. Set in a warm place for 1 hour to rise.
Step 5
Bake at 350 degrees for 45 minutes.
