Arugula, Mozzarella and Grilled Fennel Salad

Step 1
1 each • Fennel bulb
4 oz • Olive oil
1 each • Lemon juice, fresh
Slice fennel bulb lengthwise into 6 slices. Brush generously with olive oil, season with salt & cracked black pepper. Grill on charbroiler to gain four sets of marks, remove to less heat and finish cooking. Sprinkle with lemon juice and chill quickly.
Step 2
2 tbsp • Sherry vinegar
1/3 cup • Extra-virgin olive oil
1 tsp • Sugar
1/4 tsp • Ground fennel
Dressing: Combine ingredients, allow to marinate for at least 2 hours
Step 3
3 each • Arugula-bunches
8 oz • Mozzarella cheese-fresh
Wash, dry, and coarsely break up arugula. Mix with dressing at service. To plate: place one slice of cheese, top with dressed arugula and then a slice of grilled fennel.
