Chickpea Salad with Garlic-Cumin Vinaigrette

Step 1
2 lb Chickpeas, canned • rinsed and drained
1 tsp Salt
1/4 tsp Ground black pepper
Place chickpeas in bowl and season with salt and pepper.
Step 2
1 each Onion - medium • finely chopped
3 1/2 oz Parsley • chopped
1 each Lemon • juice of
2 tsp Cumin powder
5 each Garlic cloves • chopped
Add to chickpeas and mix gently to combine.
Step 3
4 oz Calamata olives • Pitted
1 lb Tomatoes • diced
3 1/2 oz Hot peppers • chopped
Add remaining ingredients to bowl, and mix to combine.

To make Chick pea puree, blend in food processor with 1 TBLS. EVOO per 2 cups of salad, serve with cut fresh vegetables and baked whole wheat pita chips
